Sauerkraut is a fermented product, which means that it has a large amount of non-toxic lactic acid. Machandel pasteurized sauerkraut has been pasteurized at 90ºC. The duration depends on the size of the pot. All pathogens and microbes have been destroyed in this process. Drain the water from the pot and add the sauerkraut to a salad or, if you prefer, add it to your favorite stew. It can be taken directly from the pot or heated without reaching a boil. Once opened, store in the refrigerator.
