Umeboshi from La Finestra Sul Cielo are organic Japanese salted plums.Our umeboshi are produced in Japan according to the traditional method. The plums of the Ume variety are harvested while still unripe and put in salt to season with the addition of shiso leaves which give the characteristic pink color. Harvested still green, they are left to ferment in salt in wooden barrels for a month, together with Shiso leaves that give them aroma and flavor. They are then removed from the barrels and left to dry in the sun for a week, thus acquiring the characteristic wrinkled appearance. It is recommended to use in cooking with vegetables and cereals or mashed and pureed to season and prepare sauces. Macrobiotic drink: put a pitted Umeboshi and a teaspoon of Shoyu in a cup and add a cup of hot Kukicha.
